Vegan Choc Chip CupcakesVegan Recipe 1 – here goes. Not the healthiest cakes out there but it is New Years Eve! Any questions or recommendations for the recipe? Please comment below. Thanks.

Choc Chip Cupcakes with Orange Buttercream Frosting

1/2 cup soy cream
1/2 cup hazelnut or almond milk
1 tsp apple cider vinegar
1/3 cup of vegetable oil (I use rapeseed)
3/4 cup granulated sugar
2 tsp vanilla extract
1/2 tsp almond extract
1 and 1/4 cups plain white flour
2 tbsp cornflour
1 tsp baking powder
1/2 tsp baking soda
pinch of salt
1/3 cup dark chocolate chips

1) Preheat your oven to 180c. Lay out about 14 cupcake liners
2) Pour the soy cream, nut milk and apple cider vinegar into a bowl and mix with a fork until combined. Leave for a few minutes so that it can curdle
3) Add the oil, sugar, vanilla and almond extract and again mix with a fork
4) Add the remaining dry ingredients and stir thoroughly
5) Immediately pour into the cupcake liners (about 2/3 full) and bake in the oven for 20 minutes. When they are just browning take them out and let them cool

Heaped tbsp of vegetable fat/shortening
Heaped tbsp of vegetable margarine (I use Pure Sunflower)
1 1/3 cups ish of golden icing sugar
grated zest of half a large orange
juice of half a large orange
1 tsp vanilla extract

1) Mix the shortening and margarine in food processor (can be done by hand with a spoon)
2) Add the icing sugar and process until combined. It will look a bit like pastry dough
3) Add the remaining ingredients and process until you have a thick but pourable consistency. Add more orange juice or icing sugar if need be.
4) Refrigerate whilst the cakes are cooling. Then pile as much as you like onto the cupcakes and enjoy!!
