Chargrilled Veg Wrap

This is more of an idea than a recipe but it’s quick to make and perfect for a summer dinner so I thought I would share. Other good veg to include would be asparagus, artichokes and red onion.
2 soft tortilla wraps
1 tsp olive oil
1/3 courgette, cut into slices
1 small yellow pepper, cut in 4 pieces lengthwise
1 palm sized piece of marinated tofu, cut into 2 diagonally (I cheated and used Taifun’s garlic tofu)
2 tbsp hummus
1 ripe avocado
a handful rocket
2 small tomatoes or a couple of cherry toms cut half
a few drops of fresh lemon juice
1) Rub the olive oil evenly over a cast-iron grill pan
2) Allow to sit over a high heat for a minute
2) Lay the courgette, pepper and tofu out in the pan and cook for about 4-5 minutes on each side
4) Meanwhile heat the tortilla wraps in the oven for 5 minutes or so, until they are just warm
5) Spread the hummus on each wrap. Top with avocado (I like to mash it down with a fork), rocket, tomatoes and the lemon juice
6) Finish with the chargrilled vegetables and tofu and enjoy
